ABC soup

This soup really needs no introduction. However, while everyone cooks ABC soup, the taste may differs with the various versions. This recipe attempts to document a set of procedures to cook a version that brings out the natural flavour of its ingredients. The key is in the proportion. Ingredients: - 500g of pork ribs - 3 large Russets potatoes, cut into chunks - 3 carrots, cut into chunks - 1 large onion, cut into chunks - 2 cobs of corn, cut into chunks - 4 tomatos, cut into quarters - 1 chicken cube Procedures: 1) In a large pot, add the pork ribs, potatoes, corns, carrots and onions. 2) Add boiling water to just cover the ingredients. Let it cook for 1 hour. 3) Add tomatoes and chicken cube. Let it cook for another 15 minutes. 4) Adjust the taste with sea salt if needed. Serve.

Mixed Fry Vegetables (cauliflowers)

This is my elder son's favourite vegetable dish. Ah ma (grandmother) often cooks it especially for him. Ingredients: - 1 head of cauliflower, cut into flowerets  - 2 sticks of carrots, sliced - 1 packet of snow peas - fried shallots - 4 cloves of garlic, minced - 2 tablespoons of oyster sauce - pepper Procedures: 1) To a frying pan, add some vegetable oil and fry minced garlic until fragrant. 2) Add cauliflowers, carrots and snow peas. 3) Add a few tablespoon of water and let the vegetables cook until soft. 4) Add oyster sauce and pepper. 5) Serve with some fried shallots sprinkled on top.

Homemade Mango Ice-cream

My boys made this ice-cream for Father's Day. They chose mango ice-cream as their father is a fruit lover. Ingredients: - 700ml of thick whipping cream  - 1 can of condensed milk  - 4 large mangos  - 1 teaspoon of vanilla extract  - yellow food colouring  Procedures: 1) Cut the mangos into dices. Blend most of the mango dices into puree and reserve some to be added later.  2) Whip the cream until it gives firm peaks.  3) Add vanilla extract and a few drops of yellow food colouring.  4) Add condensed milk. Mix well using a spatula.  5) Add mango puree and dices. Mix well using a spatula.  6) Place the cream in the freezer. Stir every hour for 4 hours. Freeze the ice-cream completely after that. Serve. 

Coney Dogs

Since an A&W fast-food chain has emerged at the Jewel Changi, there has been a craze surrounding it. Here is a home-made version of the Coney Dogs.  Ingredients: - 4 good quality sausages  - 4 hotdog buns  - 300g of minced beef  - 1 large yellow onions, chopped  - 3 tablespoons of tomato ketchup  - 1 tablespoon of mustard sauce  - 1 tablespoon of balsamic vinegar  - 1 sprinkle of salt  - 1 teaspoon of sugar  Procedures: 1) Add onions to a frying pan and fry with some vegetable oil until softened. Reserve a bit of raw onions.  2) Add minced beef and fry until brown. 3) Add tomato ketchup, mustard sauce, balsamic vinegar, salt and sugar.  4) Oven bake the sausages for about 20 minutes.  5) Assemble the sausages in the hotdogs. Top up with the beef sauce. Sprinkle some raw onions. Serve.
