Crispy Garlic Soya Sauce Chicken Wings

In the early years of our marriage, my husband and I liked to frequent Bakers Inn and order Crispy Garlic Soya Sauce Chicken Wings for supper. Today, I suddenly remembered his dish and decided to cook it. You could substitute chicken wings with chicken thighs too. Ingredients: - 3 tablespoons of light soya sauce - 2.5 bulbs of garlic, mince 3 cloves and slice the rest - 2 tablespoons of sugar - pepper - 1kg of chicken wings or chicken boneless thighs - white sesame seeds Procedures: 1) Marinate chicken with light soya sauce, minced garlic, sugar and pepper for at least 3 hours. 2) In a frying pan, add vegetable oil and fry sliced garlic until crispy. Set aside the garlic. 3) Lay the chicken on a baking tray. Brush them with the garlic-infused oil. Bake at 180 degree celsius for half an hour (covered). 4) Bake the chicken at 220 degree celsius for 10 minutes (uncovered). 5) In a saucepan, heat up the chicken marinate until thickens. Egg Salad Canape

We know egg salad. What about placing the egg salad on a slice of baguette serve it as a canape? Ingredients: - 5 chicken eggs, hard-boiled  - 2 loaves of baguette, sliced - 3 tablespoons of mayonnaise  - 1 tablespoon of mustard sauce  - 3 slices of bacon - rocket leaves  - pepper  Procedures: 1) Lay the sliced baguette on an oven tray. Drizzle with olive oil. Bake in the oven at 180 degree celsius for 5 minutes.  2) Pan-fry bacon until crispy. Cut into small pieces.  3) In a mixing bowl, add hard-boiled eggs. Mash the eggs. Add bacon, mayonnaise, mustard and pepper. Mix well.  4) Add the egg salad on each slice of baguette.  5) Garnish each slice by adding a rocket leaf. Serve. 

Oven-baked Marmite Chicken Wings

This is a simple fuss-free recipe of Marmite Chicken Wings which does not need much time for preparation or cleaning up. Ingredients: - 2kg of chicken wings, mid-joint - 4 cloves of garlic, minced - 4 tablespoons of light soya sauce - 2 tablespoons of Marmite - 3 tablespoons of sugar - pepper Procedures: 1) Marinate chicken wings with light soya sauce, Marmite, sugar, pepper and minced garlic. Leave it for a few hours in the fridge. 2) On a baking tray, lay the chicken wings on a single layer. Drizzle the remaining marinate on the chicken wings. 3) Bake the chicken wings at 180 degree celsius for 20 to 25 minutes. Serve. 

Roasted Cherry Tomatoes

This tapas is so good and so simple- Roasted Cherry Tomatoes. Ingredients: - 250g of strawberry cherry tomatoes - 4 cloves of garlic, minced - olive oil - 1 teaspoon of salt - 1.5 tablespoons of sugar - balsamic vinegar Procedures: 1) Place the washed cherry tomatoes on a baking tray. 2) Add minced garlic, olive oil, salt and sugar. Mix well. 3) Bake at 180 degree celsius for 20 minutes. 4) Add a drizzle of balsamic vinegar.

Cream Cheese Stuffed Pepper

My husband and I like Stuffed Jalapeno. But it is not easy to get Jalapenos in Singapore. This substitute with capsicums is not too bad too. Ingredients: - 150g of cream cheese - 5 cloves of garlic, minced - 1 tablespoon of parmesan cheese - 1 teaspoon of mixed herbs - 1 teaspoon of paprika - 1 teaspoon of salt - 3 capsicums (green, red and yellow) Procedures: 1) Cut capsicums into quarters and remove the seeds. 2) In a mixing bowl, add cream cheese, garlic, parmesan cheese, herbs, paprika, salt and mix well. 3) Spread cream cheese mix on each piece of capsicum. 4) Place them on a baking tray. Drizzle olive oil on it. Bake at 180 degree celsius for 30 minutes. Serve.

Chicken and Chorizo Paella

Paella is not easy to cook. The amount of water to add and cooking duration always baffle me. However, paella can never be missing in a Spanish meal. So, for this week Spanish Saturday dinner, I am cooking Chicken and Chorizo Paella. Ingredients: - 1kg of short grain rice (Spanish, Japanese)   - 1kg of chicken thigh, cut into bite-size pieces  - 200g of chorizo, cut into thin slices  - vegetables such as green peas, capsicum  - 1 yellow onion, chopped  - 5 cloves of garlic, minced - 1 teaspoon of paprika  - 2 teaspoons of tomato paste  - 1 teaspoon of mixed herbs  - 2 chicken cubes  - salt  Procedures: 1) Add olive oil to a pan and fry chicken and chorizo. When cooked, set it aside.  2) Salute onions and garlic. Add vegetables and washed rice.  3) Add tomato paste, paprika, herbs, chicken cube and stir well.  4) Add water until just covers the rice.  5) When the water reboils, add chicken and chorizo on top.  6) Switch to small fire. Bread Crumbs Mussels

Here is another easy to make tapa - breadcrumbs mussels. Ingredients: - 900g frozen cooked mussels  - 5 tablespoons of panko breadcrumbs  - 4 cloves of garlic, minced  - 1 teaspoon of salt  - 1 teaspoon of mixed herbs  - mozarella cheese  Procedures: 1) In a frying pan, add olive oil and fry garlic until fragrant.  2) Add breadcrumbs, salt and mixed herbs and fry until fragrant. Set aside.  3) In an oven tray, arrange the mussels in a layer. Sprinkle 1 teaspoon of breadcrumbs to each mussel.  4) Sprinkle some mozarella cheese on each mussel. Bake at 180 degree celsius for 30 minutes. Serve. 

Salted Fish Beanspouts

This dish may not need a recipe. But I have decided to still record it down so that I will remember to cook in future. Ingredients: - 300g of beanspouts  - 20g of threadfin salted fish, cut into small pieces  - 4 cloves of garlic, minced  - 100g of spring onions, chopped  - 1 tablespoon of oyster sauce  - pepper  Procedures:  1) Add garlic, salted fish and oil to frying pan. Fry until fragrant.  2) Add beanspouts and spring onions. Fry until cooked but still crunchy.  3) Add oyster sauce and pepper. Serve.
