Nyonya Bak Zhang Cake

My husband likes Nyonya Bak Chang but I am not very good at wrapping bak chang. So, this method is an easy to serve the dish without the skill. 





Ingredients:
- 3 cups of glutinous rice 
- a handful of blue pea flowers 
- 500g of minced pork 
- 1 onion, diced 
- 6 large mushrooms, diced 
- 200g preserved winter melon, diced 
- 1 tablespoon of light soya sauce
- 1 tablespoon of dark soya sauce 
- 1 teaspoon of coriander powder
- 1 tablespoon of minced garlic
- 1 tablespoon of minced ginger/galangal

Procedures:
1) Soak blue pea flower in 1.5 cup of water. 
2) Wash glutinous rice. Soak half of the glutinous rice in 1.5 cup of water. Soak another half of glutinous rice in the blue pea flower water. 
3) Cook both rice separately in rice cooker or steamer. 
4) In a fryer pan, fry onions in vegetable oil. Add minced garlic, ginger/galangal and coriander powder. 
5) Add minced pork, fry until brown. Add light soya sauce, dark soya sauce and pepper. Add winter melon and mushroom. Season with salt. 
6) Assemble the Nyonya Bak Chang Cake.
