Mooncakes - 4 Flavours

Making mooncakes is like doing crafts. So, once a year, I will get the boys to make mooncakes with me and masquerade it as craft time. This year, we make 4 flavours of mooncakes together.


Flavour 1: Traditional Baked Mooncake with Lotus Paste and Single Yolk. 


Ingredients for 10 mooncakes: 
- 350g of flour 
- 65g of peanut oil 
- 250g of golden syrup 
- 1.5 tablespoon of alkaline water 
- 750g of lotus paste 
- 10 salted egg yolks
- 50g of melon seeds 

Procedures: 
1) Sieve and mix flour, golden syrup, peanut oil and alkaline water. Make it into a dough. Cover it with cling wrap and let it rest for 15 minutes. 
2) Coat salted egg yolks with sesame oil. Steam it for 5 minutes. 
3) Mix melon seeds into lotus paste. Split it into 10 portions. Roll them into balls. 
4) Split the dough into 10 portions. Roll them into balls. 
5) Wrap a salted egg into each lotus paste ball. Flatten the dough on a baking paper and cover the lotus paste ball with the dough. Make into Mooncake shape using a mould. 
6) Brush the mooncakes with egg wash. Bake for 15 minutes in 160 degree celsius.  

Flavour 2: Chocolate Baked Mooncake with White Lotus Paste and Single Yolk. 

Ingredients for 10 mooncakes: 
- 320g of flour 
- 50g of cocoa powder
- 65g of peanut oil 
- 250g of golden syrup 
- 1.5 tablespoon of alkaline water 
- 750g of white lotus paste 
- 10 salted egg yolks 

Procedures: 
1) Sieve and mix flour, cocoa powder, golden syrup, peanut oil and alkaline water. Make it into a dough. Cover it with cling wrap. Let it rest for 15 minutes. 
2) Coat salted egg yolks with sesame oil. Steam it for 5 minutes. 
3) Split the white lotus paste into 10 portions. Roll them into balls. 
4) Split the dough into 10 portions. Roll them into balls. 
5) Wrap a salted egg into each lotus paste ball. Flatten the dough on a baking paper and cover the lotus paste ball with the dough. Make into into Mooncake shape using a mould. 
6) Brush the mooncakes with egg wash. Bake for 15 minutes in 160 degree celsius. 

Flavour 3: Snowskin Yuzu Lotus Paste with Macadamia nuts. 


Ingredients for 10 mooncakes: 
- 500g of snowskin mix 
- 70g of shortener
- 200ml of water with a few drops of pandan paste 
- macadamia nuts
- 750g of yuzu lotus paste 

Procedures:
1) Rub shortener into Snowskin mix. Add water with pandan paste and knead it into a smooth dough. 
2) Split the yuzu lotus paste into 10 portions. Roll them into balls. 
3) Split the dough into 10 portions. Roll them into balls. 
4) Wrap 5 half macademia nuts into each lotus paste ball. Flatten the dough on a baking paper and cover the lotus paste ball with the dough. Make into Mooncake shape using a mould. Refrigerate it. 

Flavour 4: Snowskin Yuzu Lotus Paste Mooncake with Chocolate Truffle. 


Ingredients for 10 mooncakes: 
- 500g of snowskin mix 
- 70g of shortener
- 200ml of water with a few drops of red dye 
- 10 chocolate truffle 
- 750g of yuzu lotus paste 

Procedures:
1) Rub shortener into Snowskin mix. Add water with pandan paste and knead it into a smooth dough. 
2) Split the yuzu lotus paste into 10 portions. Roll them into balls. Wrap a chocolate truffle into each yuzu paste ball.  
3) Split the dough into 10 portions. Roll them into balls. 
4) Flatten the dough on a baking paper and cover the lotus paste ball with the dough. Make into Mooncake shape using a mould. Refrigerate it.

  1. Special note in the making

    1. Any addition of filling eh. Melon seeds, egg yolk, chocolate, need to take out the same volume of paste from the filling, so that the total volume remains the same.
    2. Chocolate with liquid filling has to be frozen to prevent it from being squashed.
    3. The 冰皮 dough has to be worked upon until smooth. In 2020, the white one got quite smooth. The pink one remained elastic and holey.
    4. Choc skin no need egg wash.
    5. Durian filing don't use choc skin. Flavour clash.
    6. Macadamia nuts, chopped ones, taste 漏风.
    7. Shape the filing in a flat cylinder instead of a ball.
