Nyonya Bak Zhang Cake

My husband likes Nyonya Bak Chang but I am not very good at wrapping bak chang. So, this method is an easy to serve the dish without the skill.  Ingredients: - 3 cups of glutinous rice  - a handful of blue pea flowers  - 500g of minced pork  - 1 onion, diced  - 6 large mushrooms, diced  - 200g preserved winter melon, diced  - 1 tablespoon of light soya sauce - 1 tablespoon of dark soya sauce  - 1 teaspoon of coriander powder - 1 tablespoon of minced garlic - 1 tablespoon of minced ginger/galangal Procedures: 1) Soak blue pea flower in 1.5 cup of water.  2) Wash glutinous rice. Soak half of the glutinous rice in 1.5 cup of water. Soak another half of glutinous rice in the blue pea flower water.  3) Cook both rice separately in rice cooker or steamer.  4) In a fryer pan, fry onions in vegetable oil. Add minced garlic, ginger/galangal and coriander powder.  5) Add minced pork, fry until brown. Add light soya sauce, dark soya sauce and pepper. Add winter melon and mushroom. Season with sal

Tom Yum Soup

This is my hubby's favourite Thai dish. Actually, Tom Yum Soup is really not difficult to make.  Ingredients: - 10-15 lime leaves, torn into halves  - 2 large chili, sliced  - 2 stalks of lemon grass, cut into large pieces  - thumbsize ginger, sliced - thumbsize galangal, sliced  - 3 cloves of garlic, sliced  - half a cup of lime juice  - 1 tablespoon of Thai chili paste - 1 tablespoon fish sauce  - salt - chicken stock cube  - oyster mushrooms - tomatoes, cut into large chunks - seafood (prawns, sotong), chicken  - evaporated milk  - prawn broth  Procedures: 1) Place the spices (chili, lime leaves, lemon grass, ginger, galangal, garlic, Thai chili paste) in a pot of boiling prawn broth. Let it simmer for a while.  2) Add chicken, tomatoes and  mushrooms. Season with chicken stock, fish sauce, lime juice and salt.  3) Add seafood and let it cook only for a while.  4) Add evaporated milk (skip this step for clear soup). 

Kueh Pie Tee & Popiah

The cousins are over for afternoon tea. This popian spread is easy to make and it can feed a crowd.  Ingredients: - prawns, boiled and halved  - beansprouts, boiled  - coral lettuce, washed and chopped  - 2 large turnips, cut into shreds  - 5 eggs, hard-boiled and cut into small pieces  - crushed peanuts  - fried shallots mixed with crushed potato chips  - sweet black sauce  - chili sauce  - garlic sauce (minced garlic with sesame oil and salt)  - 2 tablespoons of light soya sauce  - 2 tablespoons of oyster sauce - 1 chicken cube  - 1 tablespoon of sugar  - pepper  - minced garlic  - 1 packet of spring roll skin  Procedures: 1) Add minced garlic and vegetable oil to the frying pan. Fry until fragrant. Add shredded turnip. Add light soya sauce, oyster sauce, chicken cube, sugar, pepper and one cup of water. Let it simmer for 20 minutes.  2) Assemble the popiah with the other ingredients. Enjoy.
